Sometimes the best discoveries are the ones you never intended to make. Meet Island Cut, our Australian Single Malt Whisky aged in ex-coconut rum casks, with an unexpected tropical twist.

Island Cut wasn’t exactly part of the plan! When Mick filled a delivery of barrels with our single malt spirit, a particularly nasty head cold meant he couldn’t smell a thing. It wasn’t until a couple of months later, when a distinct coconut aroma began drifting through the barrel store, that he realised these casks had previously held bourbon and coconut rum!

Cue a moment of mild panic, followed by a rather delicious discovery.

Four years later, that happy accident has become Island Cut. Fully matured in these unusual casks, this single malt opens with the comforting aroma of warm ANZAC biscuits, followed by coconut brittle and sweet red apple on the palate. A lingering finish of nougat and warm frangipane rounds out this beautifully approachable whisky. The coconut influence is subtle, adding character rather than stealing the show. A little unexpected, a little tropical, and unmistakably Angel’s Share.
