The idea for Imbue Distillery was born when founders, Mel and Mick Sheard, decided to use their many years of hospitality experience to create something truly special. The result? A range of rich, flavoursome spirits, made with local botanicals and a commitment to reducing our impact. Each bottle contains ingredients that are meaningful to Mel and Mick, telling a captivating story that can’t be found elsewhere.

In 2019, their good friends, Luke and Nikki, joined the Imbue family, bringing the perfect ingredients of logic and reason to complement the Sheards’ base spirit of bold creativity!

Combined, the foursome brings 60 years of experience in Melbourne’s food industry to the table, spanning retail, wholesale, bakeries, catering, and hatted restaurants. The results speak for themselves, with a range of exquisite, premium spirits that are unique and thoughtfully created.

Today, you can explore Imbue’s spirits in the Distillery Door, the on-site experience space in Research.
